With Thanksgiving behind us, I've been looking to eat more whole foods and increase my fruit and veggie intake. I'm always looking for new recipes and new ways to mix foods I love together. When I came across this recipe, I knew I had to try it. It makes healthy eating so easy. Dark green veggies, whole grains, fiber. What's not to love?! I give full credit to How Sweet Eats for this one and it definitely won't be the last time I make it.
Warm White Bean & Spinach Salad
3 slices turkey bacon, chopped
1/2 sweet onion, chopped
1 cup baby bella mushrooms, chopped
1 clove garlic, minced
6 (or more) ounces baby spinach
1 can cannellini beans, drained and rinsed
1 cup cooked couscous
Heat a skillet on medium heat and add chopped bacon. Fry until golden brown, then remove bacon with a slotted spoon and let drain on a paper towel. Add onions and mushrooms and saute until soft, about 5 minutes. Add minced garlic and spinach and stir for 2-3 minutes, until spinach is wilted. Add in beans and quinoa. Turn off heat and stir in bacon. Serve as a main entree or side dish.
